Dawn, my mother and I are the only ones that like this soup, but I'm going to post the recipe so that if others like Split pea, they can try this one. Dawn gave great reviews this time too, so that's always a good thing, when one of the picky eaters gives their thumbs up. I know that it's spring and soup is kinda of getting out of season, but I love to make up some when we've had Ham, since Easter was just last weekend...we've been on a ham kick this week. lol.
Split Pea Soup:
8 cups of water (I did 4 cups of water and 4 cups of GF Progressive Chicken broth)
1 pound of dried spilt peas( equals to about 2 1/4 cup)
1 medium onion chopped (equals to about 1/2cup)
1-2 garlic cloves (minced)
1 teaspoon of sea salt (can use regular)
1/4 teaspoon of pepper
2 medium carrots, diced up small to make about a cup (cut about 1/2inch)
2 medium stalks of celery (cut the same way as the carrots) - optional
2 cups of diced ham
1 ham bone
Combined all ingredients and cook to a boil, cover and reduce heat to low. Simmer at least 2hrs or until smooth, stirring occasionally. If soup appears dry add more water or broth. Can use the crock pot, but coat the inside with cooking spray. Combine all ingredients and cook the crockpot on high 3-4hrs or low 6hrs.
